If you’ve been following the news, you might have heard that the price of cocoa beans has shot up by over 200% this year. It’s wild, right? The reasons behind it are a mix of things — all sorts of unpredictable weather in places like West Africa where most of the world’s cocoa comes from, labor shortages, and supply chain problems. It’s no surprise that prices have gone through the roof.
Now, even though cocoa costs are climbing, I’m going to keep the price of my chocolate classes the same through the end of 2024. But starting in January 2025, I’ll need to adjust the pricing for my chocolate classes.
Chocolate 101 and Chocolate 102 will go up by $20 per person, making it $215 for one student and $120 for each additional student, beginning January 2025.
Chocolate Classes Overview
In Chocolate 101, we start with a fine Belgian couverture chocolate tasting and teach you the differences between types of chocolate, cocoa powder, and the percentages on chocolate bar wrappers. You’ll learn how to properly work with chocolate for confections, decorations, candies, and baking.
Next, you’ll master tempering chocolate using the Seeding method, so no more soft coatings or stuck-together cookies! We’ll show you how to make chocolate bars, confections, and cake decorations.
Together, we’ll create hand-rolled truffles, dip cake pops like the pros, mold solid chocolate shapes, and work with cocoa butter transfer sheets for sophisticated designs. All equipment used is home-kitchen friendly.
In Chocolate 102, you’ll learn to temper chocolate using the Tabliering (Tabling) method, building on the skills from Chocolate 101. We’ll dive into making filled chocolates (bonbons) with a variety of delicious fillings — both truffle-based and sugar-based, like caramel and fruit creams.
And of course in both classes, you’ll go home with a big box of your own hand-crafted filled chocolates and detailed recipes to recreate at home!
