An entremet is a multi-layered mousse cake comprised of a variety of textures and flavors. The pastry can be made into interesting shapes such as a dome, pyramid or a rectangle, and is often decorated in very elaborate ways.
This particular entremet has a dome of pistachio mousseline, within a dome of chocolate mousse, a layer of crushed pralinettes, a sable cookie base and is topped with a chocolate mirror glaze.
We offer baking classes and teach students to make entremets at home. Guests are always impressed when presented with one of these spectacular desserts, which also happen to be delicious!!
