Pretty cakes for the ballerina in your life. The tiara is made from sugar, the ballet slippers are chocolate. The cake is as pretty inside as it is on the outside. The light Tahitian Vanilla cake layers are filled with light pink strawberry mouse and covered with a combination of white and pink vanilla cooked Italian meringue buttercream. The large cake, complete with tutu and edible lace, is covered with strawberry flavored white chocolate.

We combined alternating layers of French chocolate biscuit (pronounced: bis kwee), with Tahitian vanilla biscuit and layered those with strawberry cream. The cake is finished with Tahitian vanilla cream cheese frosting. The musical notes are chocolate, the lilies and lily pads are gum paste (sugar) and the cake board and cake topper are fondant, in other words: everything is edible! This four tier tree stump cake feeds 40 people. We make it in your choice of flavor however, this one has layers of strawberry (red), Tahitian vanilla (white) and blueberry (blue) cake and is filled with strawberry cream cheese. It was wrapped in cooked Italian meringue vanilla buttercream frosting and then decorated with vanilla fondant.
The bald eagle is fondant and the nest is made from coconut.

Students learn to bake and build fine cakes by combining both texture and flavor. This student made a cake consisting of layers of coconut Dacquoise (a meringue base cake layer), almond lemon Genoise (cold process using nut powders) and filling the cake with layers of Meyer lemon Mousse, freshly poached peaches and Tahitian vanilla creme Anglaise folded with meringue butter.
