In addition to creating custom cakes, chocolates and sugar art, Chef Heather also teaches baking, cake building, cookie and cupcake decorating, as well as showing students how to make their own realistic gumpaste flowers and figures.

Classes are customized to each student or group of students. Classes are held weekdays and evenings throughout the year (and some weekends). Private lessons are $35 per hour plus the cost of ingredients. The hourly rate is discounted for groups. All materials, tools and ingredients are supplied.

Classes are held in the Forest Hills area of Nashville (Old Hickory Blvd. and Granny White).

Baking Classes include: 

Cakes (classic French and American) in addition to cake building techniques

Cookies, cupcakes, cake pops and French Macaron

Pies and Tarts

Petit Fours

Buttercreams (Swiss, French, German, Italian and American)

Fillings for cakes and pastries

Understanding ingredients (such as when to use Dutch Process cocoa powder and when to use Natural cocoa powder)

Chocolate Classes include:

Classic chocolates, truffles and molded items. Chocolate decorations

Understanding chocolate, complete with chocolate tastings (a fun group event)

Ganache (your secret weapon!)

Modeling chocolate (secrets to making it)

Decorating and Sugar Arts Classes include:

Fondant basics

Modeling (with fondant, modeling chocolate and gumpaste)

Gumpaste flowers (realistic flowers and foliage)

Piping with different types of icing (decorations and borders)

Note, other classes are available upon request.

Cake Decorating Parties

We will attend your special event and teach your guests a few choice recipes they can use for their own cakes and confections.

Regardless of your age, you can create beautiful works of edible art using Heather’s simple techniques and signature style.
