We combined alternating layers of French chocolate biscuit (pronounced: bis kwee), with Tahitian vanilla biscuit and layered those with strawberry cream. The cake is finished with Tahitian vanilla cream cheese frosting. The musical notes are chocolate, the lilies and lily pads are gum paste (sugar) and the cake board and cake topper are fondant, in other words: everything is edible! This cake is available in the flavor combination of your choice.

This four tier tree stump cake feeds 40 people. We make it in your choice of flavor however, this one has layers of strawberry (red), Tahitian vanilla (white) and blueberry (blue) cake and is filled with strawberry cream cheese. It was wrapped in cooked Italian meringue vanilla buttercream frosting and then decorated with vanilla fondant.
The bald eagle is fondant and the nest is made from coconut.
Well, some of them are still playing hockey in the month of May! This particular player has taken to his chocolate boat for a little R & R.
The hockey player is made out of gumpaste and fondant (both are edible) and the boat is made entirely from chocolate (YUM).

Students learn to bake and build fine cakes by combining both texture and flavor. This student made a cake consisting of layers of coconut Dacquoise (a meringue base cake layer), almond lemon Genoise (cold process using nut powders) and filling the cake with layers of Meyer lemon Mousse, freshly poached peaches and Tahitian vanilla creme Anglaise folded with meringue butter. The Grinch, Max the dog and Cindy Lou Who were special guests at this festive Dessert Party held in Nashville on December 14th. All of the sculptures were molded from chocolate. Guests were treated to over 50 handmade confections.
We hold sugar art camps for every holiday. This little camper participated in the Christmas Tree camp and created several holiday trees and little chocolate mice.

This cake was created for a little girl who really wanted a Princess and the Pea birthday party. Happy Birthday, Princess Olivia.
Little Bentley was absolutely thrilled with his western ranch themed birthday cake. His edible sugar art included a horse, cow, clothing, signage and, of course, Bentley himself!!
The French Petit Four is truly a work of art. This particular Petit Four starts with an almond-shortbread cookie base, is rimmed with dark Belgian couverture chocolate and then rolled in toasted almonds. We top it off with a swirl of Kirsch and cherry chocolate truffle and finish it off with a decorative chocolate wave. Our Petit Fours are perfect for a small dinner party.
White pumpkins are the rage this year. This particular cake is pumpkin-cranberry-pecan with pumpkin spice cream cheese filling. The little sugar art pumpkins on and around the cake may be kept for next year or eaten … they are rice cereal treats inside, wrapped in high quality vanilla fondant.

This fantasy tree was created using fondant and chocolate. An edible landscape was created using cake, complete with glistening stream and edible cookie dirt.
The edible lace on the bottom tier of the wedding cake was created to match the lace in the bride’s wedding gown. The Ranunculus flowers were made out of an edible sugar medium called gumpaste and matched the flowers in the bride’s bouquet.
