A Memorable Memorial Day

This four tier tree stump cake feeds 40 people. We make it in your choice of flavor however, this one has layers of strawberry (red), Tahitian vanilla (white) and blueberry (blue) cake and is filled with strawberry cream cheese. It was wrapped in cooked Italian meringue vanilla buttercream frosting and then decorated with vanilla fondant.

The bald eagle is fondant and the nest is made from coconut.

Chef Heather Longpré is a graduate of the French Pastry School of Kennedy-King College in Chicago, Ill. She studied sugar art with Nicholas Lodge, Mike McCarey, Scott Green, Sebastien Canonne M.O.F., Jacquy Pfeiffer, among other very accomplished Chef-Artists. She is also a Professional Chocolatier having graduated from Ecole Chocolat in Vancouver, Canada. In addition to being a chef, Heather teaches baking, chocolate making, sugar art and cake decorating classes.
